Filled dumplings turn up across Eastern Europe in countless forms, usually boiled and served with butter or sour cream. Simmering them in a garlicky tomato sauce is a modern home-kitchen twist: familiar comfort food, with a brighter sauce. It is hearty, easy to scale, and made for sharing.

- Add the onion and sauté for 3–4 minutes until soft. Add the garlic and cook for 30–60 seconds, until fragrant.
- Stir in the tomato sauce, diced tomatoes, Italian seasoning, red pepper flakes, salt, and pepper. Bring to a simmer.
- Add the cooked dumplings to the sauce and gently stir to coat.
- Simmer for 5–8 minutes so the flavors meld together.
- Stir in the heavy cream, if using, for a richer sauce.
- Garnish with fresh parsley or basil and serve hot.
Wine pairing
Saperavi
Red · Dry · Deep color, bright acidity
Choose a young, dry bottle. Its acidity stands up to the tomato, and its dark fruit suits the garlic and herbs.
Also try: a fresh Rkatsiteli, if you prefer white.
